About Decaf Coffee: Did you know that any coffee can be decaffeinated? In the water process, when a coffee is selected for decaffeination, the coffee is steamed and steeped in water and all of the caffeine is slowly extracted. Not only does the caffeine extract, but also the good chemical compounds within the coffee - that make it taste like coffee - extract as well. Once the process is complete, the unroasted or green coffee extract is filtered through a carbon filter which catches all of the caffeine molecules and leaves all of the good coffee compounds, and the coffee is rehydrated without the caffeine.
