Roasters Notes:
A wonderful new natural from producer Ture Waji, shines bright within a region known for its consistent, quality lots. Mayole Coffee, founded by Waji, operates its farms and washing stations out of Guji, a zone in Ethiopia with a recent history of producing excellent, high-scoring coffees. From our newest importing partner, Osito’s, site: “Mayole Coffee was established to offer a diverse range of options for both farmers and coffee buyers, focusing on various grades, origins, and processing methods.” Many thanks to Ture Waji, the farmers, and Osito for giving us the privilege of roasting this excellent lot that leaves beautiful impressions of blueberry, citrus, and a hard candy-like sweetness.

About Ethiopian Coffee:
Ethiopian green coffee is revered worldwide for its unique flavor profiles, which are deeply influenced by the country’s diverse microclimates, high elevations, and traditional farming practices. These areas offer ideal growing conditions: altitudes ranging from 1,500 to over 2,200 meters above sea level, rich volcanic soils, and moderate, steady rainfall. Such high elevations slow the maturation of coffee cherries, allowing the beans to develop more complex sugars and nuanced flavors.
Farming in Ethiopia is predominantly small-scale and organic, as many farmers rely on traditional, sustainable methods passed down through generations. Instead of large-scale mechanical harvesting, coffee cherries are handpicked at peak ripeness, ensuring better quality for the perfect flavor.

Did you know? Based on the variety of the coffee, and the elevation it is grown, these coffee beans can be extremely small. This primarily takes place because of the higher elevation. There is less oxygen at higher elevations, therefore the beans take longer to grow, and they tend to not grow as big as other beans.
